The Honey Pig
]We’re putting the spotlight on The Honey Pig cocktail on our fall Cannon Green cocktail menu.
The Honey Pig is inspired by a marriage of two vintage cocktails, the Aviation (gin, lemon, luxardo, and Creme de Violette -a violet liqueur) and the Bee’s Knees (gin, lemon, and honey). The name is inspired by the local gin we use in the cocktail, made by Striped Pig Distillery. The drink is served in a rocks glass with three medium-sized ice cubes. To give the drink a sense of the Fall season, we add sprigs of thyme which play well with the honey and add aromatics.
The Honey Pig Cocktail Recipe
(makes 1 cocktail)
2 oz Striped Pig Gin
½ oz honey syrup (equal parts honey and hot water)
½ oz lemon juice
Barspoon Creme de Violette
2 Springs thyme
Add gin, honey syrup, one sprig thyme, and lemon to shaker filled with ice and shake. Place Creme de Violette in rocks glass and roll around inside of glass to rinse the glass. Strain shaker into rocks glass over ice and garnish with other sprig of thyme.
