Fig & Fizz Cocktail

The Fig & Fizz cocktail at Cannon Green is a Tuscan-inspired riff on the traditional a tradition gin fizz cocktail.

Fig is a great seasonal product that pairs well with balsamic vinegar to form a rich syrup. Add gin, a touch of lemon, and a fresh egg white into a cocktail shaker with the fig and balsamic syrup and shake vigorously, without ice, to combine the egg white with the other ingredients in the drink. This technique is called “dry shaking.” Once the cocktail has been shaken vigorously without ice, add ice to the drink and shake hard for an extended period of time to chill the drink and aerate it. Once done, let drink set in shaker for a few seconds to settle. After this, add a splash of soda water to the drink in the shaker and strain drink into coupe glass. To add flair and flavor, drop a few dashes of bitter on top of the drink and, using a straw, drag the bitters into a circle or other shape.
